Today one of my colleagues ran into problems, when configuring a SharePoint site with SSL and access it via hostheader on a Windows Server 2008 machine. The SharePoint Central Administration creates the website in IIS, sets the bindings to port 443, but doesn’t set the hostheader for this web. We then tried to set the hostheader, but the user interface for IIS7 doesn’t allow to do this. Fortunately we found a blog entry, that describes exactly our problem (but without SharePoint) and the solution. In Microsoft Technet you can also find an article about the command line tool, to set the hostheader
